Guided by Chef Oscar Carrizosa, you'll learn how to roast cacao beans to bring out their deep, complex flavors and grind them by hand using a traditional metate, just as it’s been done for centuries. You’ll explore the rich interplay of chocolate with other native ingredients to elevate its natural essence.
Together, you’ll prepare hot chocolate with water, honoring the ancient Zapotec way, as well as create Oaxacan chocolate ice cream and a simple, flavorful mole, all centered around this sacred ingredient.
